Cooking With Philly – Chicken Macaroni with Stir Fry Veggies

The first time to cook with Philadelphia Cream Cheese and man, was it good! Indeed heaven on earth.

My daughter loves pasta so it follows that mama has to be creative on what to give her as she gets bored after a couple of meals with the same meal over and over again.

The go-to for macaroni is Mac ‘N Cheese but this time I experimented.

Chicken Macaroni with Stir Fry Veggies on Philly Cream Cheese Sauce

2 Cups of Frozen California mix vegetables, blanched

Chicken Strips (I used leftover Chicken breast, cut to strips)

2 tbsp butter

3/4 cup Catelli Macaroni

3 tbsp Philadelphia Cream Cheese

1/4 half and half cream

salt and pepper to taste

  1. Boil water and cook pasta “al dente”
  2. On a pan, heat butter and stir fry the chicken, after a minute add vegetables. Mix.  Cook for 5 minutes on medium.  Add half and half cream, wait to boil then turn fire to low heat. Add cream cheese. Mix.
  3. Add Macaroni. Salt and Pepper to taste.

 

Best eaten hot!
